Above Nusantara is Localab, a food laboratory and testing kitchen which will be the center of Lacavore’s research and development moving forward. Local ingredients of all kinds meet state-of-the-art techniques and the creative minds of Felix and Fido in an adventure of exploration. They are creating a flavor database of recipes and ingredients.
Localab will also host artisan workshops and serve as a training hub to raise awareness of young Indonesian cooks about the wealth of local food elements available to them.
Felix Schoener has over 22 years professional chef experience. His formal training included working in several Michelin starred restaurants all over Europe. After that he decided to dedicate his life path to sustainable gastronomy and whole food nutrition. Since then he has been cooking his way around the world to further his culinary study and research. He is passionate about exploring wild foraged foods, traditional local diets and their ancient techniques. Felix has joined the Locavore Research & Development team in their new upcoming Test Kitchen LOCALab.
Fido Nuswatama Rahadian’s interest in food was inspired by his Chinese grandmother. After attending cookery school in Surabaya he trained in a Surabaya restaurant. He learned about Locavore on Instagram, was very impressed by pictures of the food and asked to come and train with the team. Fido loves working with people from so many backgrounds and cultures. He’s constantly discovering new techniques and local ingredients, which has completely changed the way he thinks about food. Fido will be heading the Research and Development program at Localab.
